Il percorso del sommelier

ati per diffondere la cultura del vino e del territorio e i
giusti abbinamenti con i piatti della cucina tradiziona-
le e innovativa, i corsi per aspiranti sommelier sono
aperti a tutti, previa iscrizione all’Ais, e si sviluppano su tre livelli.
Il Primo livello introduttivo, si articola in 15 incontri, fra cui una
visita in cantina e una verifica finale con l’approfondimento sulla
degustazione. Durante il corso vengono illustrate le principali fun-
zioni e mansioni del sommelier e fornite le nozioni base di viticol-
tura, enologia e tecniche di degustazione.
Il secondo livello si focalizza sulle degustazioni ed offre una cono-
scenza approfondita delle principali zone vitivinicole, dei vitigni e
dei vini di ciascuna regione italiana, con qualche visita all’estero,
attraverso i 15 incontri, compresa la verifica finale con l’approfon-
dimento sulla degustazione.
Il terzo livello è incentrato sulle tecniche di abbinamento
cibo/vino. È articolato in 15 incontri, fra cui la cena didattica di
chiusura del corso, più l’esame finale. Al termine del 3° livello
viene rilasciato il diploma di Sommelier. Superati i tre livelli è pos-
sibile proseguire l’iter formativo all’interno dell’associazione con-
seguendo i titoli di:
Master di servizio, Degustatore ufficiale, Relatore, Commissario
d’esame.

tarted in order to spread the culture of the wines and the
territory and the correct combinations with the dishes
from the traditional and innovative cuisine, the courses for
aspirant sommeliers are open to everybody, subject to registration
with the Ais, the development is on three levels.
The First level introductory is divided into 15 meetings, including
a visit to a wine cellar and a final verification with close examina-
tion on the tasting. During the course the principal functions and
duties of the sommelier are illustrated together with the basic
notions of wine-growing, winemaking and techniques of tasting.
The second level focuses on the tasting and offers deep knowledge
of the principal of winegrowing, vines from every Italian region, with
some mention of foreign countries, during the 15 meetings, and
includes a final verification with close examination on the tasting.
The third level is centered on the techniques of combining food /
wine. It is divided into 15 meetings, including the didactic supper
at the end of the course, and the final examination. A diploma of
Sommelier is given at the end of the 3° level. After passing the
three levels it is possible to continue with the formative procedure
inside the association to achieve the titles of: Master of service,
Official Taster, Chairman, Examination Commissioner.
