The olfactory grace of flowers, cut
grass and almond intertwines with aniseed
and a beautiful marine note. Dry, sharp
acidity and strong sapidity, it shows an
excellent structure and a remarkable min-
erality which is present throughout the
tasting experience.

lear ruby hue. Very intense nose.
Violas and roses placed on a bed of
black cherries, red currants, all shaded
by a sprinkling of green pepper. The
drink is fresh, easy with graceful and
smooth tannins. Great tasting intensity
with a calibrated persistence that recalls
sweet violet.

CULATELLO DI ZIBELLO
E GNOCCO FRITTO

aglierino con intarsi dorati. La grazia
olfattiva dei fiori, dell'erba tagliata e
della mandorla si intreccia con l'anice e
una bella nota marina. Secco, dall'acidi-
tà tagliente e spiccata sapidità, mette in
mostra ottima struttura e pregevole mine-
ralità presente lungo tutto il percorso
gustativo.

FILETTO DI ORATA IN
CROSTA DI MANDORLE E PATATE
L
impido rubino. Olfatto molto inten-
so. Viole e rose adagiate su un letto
di amarene, ribes rosso, il tutto sfumato
da una spolverata di pepe verde. La beva
è fresca, disinvolta e dotata di un tannino
aggraziato e levigato. Grande intensità
gustativa con una persistenza calibrata
che echeggia alla viola mammola.
