si di pera affiancano biancospino e
tiglio per formare un bel quadro olfattivo
insieme a mandorla, menta e melone bian-
co. Secco, delicatamente caldo, caratteriz-
zato da avvincente morbidezza che lo
accompagna in un finale piacevolmente
amaricante. In acciaio per 10 mesi.
SALMONE SCOTTATO CON PUREA DI
MELE E CANNELLA
Rubino con decisi riflessi purpurei.
Glicine e lavanda aprono la strada ad
amarena, prugna e peperone verde. Un
velo tostato avvolge delicatamente perce-
zioni di pepe verde. Di gusto intenso, leg-
giadro nello scorrere al palato, presenta un
tannino cordiale. Persistenza che si arric-
chisce pian piano di rintocchi balsamici.
Matura in acciaio per 9 mesi e in botte per

of pear with hawthorn and linden to
form a beautiful olfactory frame together

A toasty hint gently envelops perceptions

the palate, it has pleasant tannins. Its persi-
stence is gradually enriched with balsamic
scents. Aging in steel for 9 months and in
