ro tenue. Mimosa, zagara, melissa.
Pesca e mela cotogna. Tocco fra-
grante e di pietra focaia. L'ingresso in
bocca è di piacevole sapidità, freschezza
e alcolicità che rendono appagante il
retrogusto su frutta matura e mandorla fre-
sca. Fermentazione spontanea sulle bucce
in anfora georgiana ove rimane per 12
mesi.

GALLETTO ALLE MANDORLE
M
anto dorato. Miele d'acacia, cera
d'api e crema pasticciera. Foglia
di pomodoro, tarassaco, frutta cotta,
albicocca disidratata e fiori appassiti.
Leggero sentore di olio essenziale di
arancia. Al gusto è morbido con acidità
e accenno salino equilibrati da decisa
nota alcolica. Chiude su lieve cenno
ossidativo. Resta in acciaio per 12 mesi.

ale golden hue. It smells of mimosa,
orange blossom, lemon balm. Fruity of
peach and quince. A fragrant touch of flint.
On the palate, immediate pleasant savour,
freshness and alcohol that give a satisfying
aftertaste on ripe fruit and fresh almond.
Spontaneous fermentation on the skins in
Georgian amphora where it remains for 12
months.

olden hue. Acacia honey, beeswax
and custard. Then tomato leaf, dan-
delion, cooked fruit, dehydrated apricot
and withered flowers. Slight hint of orange
essential oil. The taste is soft with acidity
and a salty hints balanced by a strong alco-
holic note. It closes on a light oxidative hint.
It remains in steel for 12 months and ages
in bottle for 18 months.
